Easy Healthy Chicken And Vegetable Meal For Kids

 

It may sound crazy but my kids love roasted tenderloin broccoli, beans, mangetout, mushrooms and chicken. 

I’ve come up with this simple healthy meal to save time and give my my kids their nutritional needs on a daily basis.

  1. Cook a whole chicken in advance and store in fridge
  2. Simply turn on the oven, medium to high.
  3. Cover roasting tin in foil (no washing up!)
  4. Spread the tenderloin broccoli, french beans, mangetout so their evenly spread out on the roasting tin
  5. Drizzle the veggies with Olive oil, and grind some salt and pepper 
  6. Meanwhile blanch the mushrooms in boiling water so they don’t soak up too much oil and cook for 2 minutes in the microwave 
  7. Drain and dry the mushrooms and add to the rest of the veggies 
  8. Roast for 12-20minutes 
  9. After 16 minutes add the required amount of chicken to the corner of the veggies 
  10. After 20 minutes serve as above (might need longer or less depending on your oven) 
  11. Enjoy
